Instructions
 

  • In a blender or food processor, blend 1 cup of cottage cheese until smooth.
  • Transfer the blended cottage cheese to a microwave-safe bowl.
  • Stir in the shredded cheddar cheese, taco seasoning, and diced tomatoes with chilies until evenly combined.
  • Microwave on high for 1 minute, then stir. Continue microwaving in 30-second bursts, stirring between each, until the cheese melts and the dip is smooth.
  • Top with chopped cilantro if desired. Serve warm with chips, veggies, or as a topping for tacos.

Notes

For a different twist, swap cheddar cheese with Monterey Jack or Pepper Jack for a milder or spicier taste. Store leftovers in an airtight container in the fridge for up to 3 days and reheat before serving.
