Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, salt, and baking soda.
  • Add cold butter cubes and use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  • Stir in diced ham, chopped jalapeños, and shredded cheddar cheese (if using).
  • Pour in buttermilk and mix gently. Avoid over-kneading to keep biscuits tender.
  • Transfer the dough to a floured surface. Pat into a rectangle about an inch thick. Fold into thirds, then flatten again. Repeat two more times.
  • Use a round cutter to cut biscuits and place them on the prepared baking sheet. Press scraps together to cut more biscuits.
  • Bake for 12-15 minutes or until the tops are golden brown.
  • Let the biscuits cool slightly before serving.

Notes

For extra flavor, try adding diced green onions. If using pickled jalapeños, pat them dry before adding to the dough.
