Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, salt, and baking soda.
Add cold butter cubes and use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
Stir in diced ham, chopped jalapeños, and shredded cheddar cheese (if using).
Pour in buttermilk and mix gently. Avoid over-kneading to keep biscuits tender.
Transfer the dough to a floured surface. Pat into a rectangle about an inch thick. Fold into thirds, then flatten again. Repeat two more times.
Use a round cutter to cut biscuits and place them on the prepared baking sheet. Press scraps together to cut more biscuits.
Bake for 12-15 minutes or until the tops are golden brown.
Let the biscuits cool slightly before serving.
Notes
For extra flavor, try adding diced green onions. If using pickled jalapeños, pat them dry before adding to the dough.
