Instructions
Mix sugar, water, and corn syrup in a heavy saucepan.
Warm over medium heat, stirring until the sugar dissolves.
Stop stirring and let the mixture boil until a candy thermometer reads 300°F.
Remove from heat and add peppermint extract and red food coloring (if desired).
Pour onto a greased sheet and let it cool slightly.
Score or cut into shapes before fully hardened.
Dust with confectioners’ sugar to prevent sticking.
Let the candy cool completely before serving or storing.
Notes
You can substitute honey or glucose syrup for corn syrup for a mild floral sweetness. Mint extract can be used instead of peppermint extract for a gentler mint taste.
