Instructions
 

  • In a mixing bowl, combine pineapple juice, brown sugar, and soy sauce. Stir well until the sugar fully dissolves. Optionally, add freshly grated ginger for extra aroma.
  • Place the chicken chunks into the crockpot. Pour the prepared sauce over the chicken, ensuring even coverage.
  • If using pineapple chunks or bell peppers, add them now for extra texture and flavor.
  • Cover the crockpot with the lid and set the cooking time:
    Low heat: Cook for 6-7 hours.
    High heat: Cook for 3-4 hours.
  • Avoid lifting the lid too often, as this can lower the temperature and extend cooking time.
  • Gently stir the chicken to ensure it's well-coated in the sauce.
  • Serve over steamed rice or noodles for a complete meal. Garnish with freshly chopped green onions for a burst of freshness.

Notes

For a spicier version, add chili flakes or diced jalapeƱo. Store leftovers in an airtight container in the fridge for up to 3 days.
