Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and chopped sun-dried tomatoes; cook for another 1-2 minutes until fragrant.
  • Pour in the chicken broth and bring to a gentle boil.
  • Reduce the heat to low, then stir in the heavy cream and softened cream cheese. Continuously stir until the cream cheese melts and blends smoothly into the broth.
  • Add the shredded cooked chicken and pasta of choice. Let the soup simmer until the pasta is al dente, about 10-12 minutes. Stir occasionally to prevent sticking.
  • Stir in the grated Parmesan cheese, allowing it to melt and enrich the soup with its nutty flavor.
  • Add the chopped fresh spinach and cook until wilted, about 2 minutes.
  • Taste the soup and season with salt and black pepper as needed. For a spicy kick, sprinkle in some crushed red pepper flakes.
  • Serve hot, garnished with extra Parmesan cheese if desired.

Notes
